- 1 slice Weight Watchers Brown Danish
- 1 tsp Dijon mustard
- 30g (1oz) cooked beetroot (not stored in vinegar), sliced
- 40g (1½oz) medium fat goat’s cheese crumbled
- Salt and freshly ground black pepper to season
- A few fresh thyme leaves
Preheat the grill to high.
Grill the slice of Weight Watchers Brown Danish for 1 -2 minutes or until golden on one side.
Turn and spread the untoasted side with the mustard. Top with the beetroot and the goat’s cheese.
Season and grill for 3 – 4 minutes or until the cheese has started to brown.
Halve the toastie and garnish with a few fresh thyme leaves to serve.
